Tuesday night, I was elbows deep in packed boxes all over the apartment. I was by myself in my apartment, feeling a little anxious and over-thinking the world. And it was the day before my birthday.
I have so much I’m looking forward to, and so much good stuff all around me. So I popped in an episode of Freaks & Geeks, and then Friends With Kids. I decided to sort through my craft supplies and box up some of the randomness that is my bedroom right now. And I decided to use up my small stash of rum that was not enough to pack, but not enough to toss.
This bright pink drink was the little bit of sass I needed to get me out of my own head and looking to the good stuff. (Not that I’m an alcoholic. But it got me feeling festive.)
Single Girl’s Punch
- 1 shot coconut rum
- 1 shot light rum
- juice from 1 orange
- 2 tbsp grenadine
- club soda
I worked with what I had, and the result was one of the easiest, most delicious cocktails I have been able to whip up to date.
