i need to go to sleep asap… as soon as i finish my banana + cookie butter. i’m going to a really neat event with melissa bright and early tomorrow.
quick recap: friday night was relay for life. EP and i met up with fran, ele, and their team to watch the opening ceremony. the ceremony was a lot shorter than we remembered, but everyone was there and ready to kick off the night. [including a BEAUTIFUL baby i finally got to meet. hopefully her mama doesn’t mind me sharing a photo.]
second recap for tonight: let us talk popsicles. i bought my first delicious jersey strawberries of the year this week.
i ate a bunch of them, especially on top of yogurt and next to granola. but then i decided they were too warm.
strawberry vanilla popsicles:
- 3/4 cup strawberries
- 1-1/4 cup french vanilla yogurt
- 2 tsp vanilla
- 2 tbsp honey
whir in food processor, strawberries-only until chopped, then everything until combined, and fill popsicle molds. this makes around six 3-oz popsicles.
and also, my personal favorite…
strawberry banana popsicles:
- 1/4 cup strawberries
- 1 banana
- 1/3 cup french vanilla yogurt
- 1/3 cup almond milk
the great thing about popsicles is that you can’t really screw them up, just like pasta salad or granola.
whatever you think will be delicious probably is. one note I found helpful: liquids freeze rock hard. obvious, but I forgot the first time I made popsicles. to make them more popsicley, add more sweetener, or less water.
