What happened to June?! Oh, well. Time to focus on July. (And… a little bit on June.)
Here are some things I loved last month.
Cooking. I made these vegan funfetti cupcakes for a barbecue last weekend and they were a big hit. I’ve made noodles + veggies on repeat, inspired by — you guessed it — Lauren Toyota. And I’m totally smitten with tofu right now — I’ve been coating it in panko breadcrumbs and baking it.
Vacation. And visiting my new university. And coming home from vacation. And knowing I don’t have to go anywhere in July if I don’t want to.
Here are some things I want to do this month.
Take more steps. I’ve, yet again, been lacking in movement and exercise recently. Focusing on hitting a higher step count is such an easy way to jump back in, and usually calls for two good walks during the day.
Follow a vegan diet. I’ve been experimenting with this for the last week, and it’s more of an experiment than a permanent thing. I’m interested and inspired, and also planning a few non-vegan meals this month.
Take a one second video every day. I love this project. But it is so easy to forget about it during the day. Maybe I’ll set a phone reminder.
Journal. And maybe dip my toes back into meditation.
Do a little yoga. I’d like to get back to the studio and remind myself how great yoga feels. But this might be too much for right now, so maybe I’ll start with some at home yoga.
