7:20 AM. Good morning!
I love having coffee together before work… But with this three-month retirement I’ve got going on, waking up this early is for the birds.
10:00 AM. This bread. I want to eat toast for every meal this week. I probably hadn’t eaten toast before this in a year. Along with blackberries and coconut yogurt for breakfast. I’m noticing how much of my protein had been coming from dairy recently. Need to research some healthy new sources.
12:30 PM. I met an old coworker for lunch at my favorite pizza place. It was amazing. Before I left work, I was averaging five lunches out a week, and now I’m down to one or less.
We get eggplant parmesan wraps at this place. (I started the weird, delicious trend.) Earlier this year, I started getting them with extra cheese because it just wasn’t enough for me. Today? NO CHEESE. And… still so amazing.
1:30 PM. Since our Brita pitcher started making water taste horrible a few weeks ago, we’ve been using gallon bottles. No amount of cleaning seems to help the Brita, and I’m not sure what I want to try next. So in the meantime, I’ve been buying a few gallons on every shopping trip.
2:00 PM. Some vegan dark chocolate with almonds and I’m going to work on my Project Life album. I have like three months to catch up on. Ain’t no thing.
4:30 PM. Spent way too long researching safer sunscreens for vacation next month.
7:30 PM. I didn’t love this Tofurky Italian sausage I tried tonight. It wasn’t bad; I guess I’m just not a big fan of sausage. Kale was delicious, and my attempt at cauliflower rice was interesting but pretty good.
8:00 PM. I rounded out the day with some True Blood, really old episodes of The Office, and more coconut ice cream.
