So there’s a lot going on. We’re elbows deep in boxes, and I’m stressed out. Work is difficult and complicated, and I’m exhausted.
But even with that, I feel a little bit determined that something needs to get better with my eating and taking care of myself. It’s a big process, but I wanted to do whatever I could to start that process.
So, after the move, I decided we should start eating dinners in as often as possible. It doesn’t hurt that it would also save a bunch of money.
These were some of the only photos I took that week! They were so easy to remember and I wasn’t doing anything else.
The first official night in the apartment, we got take out. So that was a cooking fail. But I didn’t want to do anything else.
I ordered a corn crab cake, over sweet potato mash, with asparagus. Amazing.
The next night, P. went grocery shopping for some random things, and came back with this incredible fresh loaf of whole wheat bread from the bakery. We ended up eating cans of soup with bread and butter while watching It’s Always Sunny in Philadelphia. It was really nice. So nice that there’s no photo, since I forgot.
On Monday, I found some frozen garlic bread that made the move with me, and we made whole wheat pasta with simple red sauce.
Store brand wheat pasta is always my favorite. This was Wal-Mart rotini, and it was definitely not an exception. The store brands I’ve found always seem to have less ingredients added, and are just straight up whole grains. Love it.
Black bean and cheddar cheese quesadillas, with salsa and sour cream! I had been snacking on raw bell peppers with hummus all afternoon, otherwise I would have sautéed peppers for this, too.
This was another cooking fail night. But 5 nights in, I definitely consider a success. We went out for Chinese food after picking up some sweet $18 plastic Adirondack chairs for the balcony.
I discovered frozen Acme brand pizza. Rising crust. Definitely not health food. But it was technically baked at home, and $5, and miraculously really delicious.
Rounding out this first week of home cooked dinners, we have Friday. This night, we were out of it. I think naps were involved. Or just being busy and forgetting about dinner. P. may have had a bowl of cereal. I had some snacks after work, and rounded out my meal around 9:30 with a caprese salad.
I cut up three awesome tomatoes for this. They were so fresh. I just topped it with some balsamic vinaigrette and called it dinner.
