Good morning! I’m linking up with Jenn for What I Ate Wednesday.
Let’s start off with the most important favorite: coffee.
Specifically, Folgers. I think it was every Folgers commercial I’ve ever seen that cemented my brand loyalty. Maybe the only time in my life that marketing has done anything for me.
I also revisited a strange but good breakfast recently: the banana scramble.
Not strange/shocking flavors. Just an odd combination to throw together and cook. But completely delicious.
My simplified version:
- 1 medium banana
- tbsp ground flax seeds
- 2 tbsp toasted wheat germ
- 2 tbsp rolled oats
- tsp vanilla
Cook it over medium heat until browned on both sides. I eat it with 2% greek yogurt. And this time, peanut butter.
A recent snack: airport chocolate. Seriously. I bought a few bars on my way back from Las Vegas a couple of months ago, and it is awesome. I think I’m over chocolate for now, but it was great for a few nights.
For snacking since then, I moved on to another awesome combination I had forgotten: peanut butter and figs.
During my fridge clean-out (!!), I found some hidden figs, and they were still good. So I grabbed the peanut butter and had a little snack. Amazing. I can’t imagine a healthy serving would be very big, since they taste like straight sugar. But at least it’s natural.
And I’ll share a favorite dinner from recently (my #1 favorite will have to wait for its own post). For now: mandarin chick’n and snow peas.
Though I’m embracing my fondness for seafood and chicken recently, there are a lot of vegetarian meals that I don’t think I’ll be parting with. And the Gardein brand was one of my favorite convenience foods. This one is the mandarin crispy chick’n. It comes with plenty of sauce, so I used most of it to top off some sautéed snow peas.
