it’s no secret that i have not been as high on the “healthy eating” bandwagon as i’d like. i go out to eat a lot right now, and while it’s delicious, it’s something i want to get a little more under control.
so, while the afternoons still usually mean ice cream or chocolate, and i just went out for a lunch + dinner in the same day… how about i look at some of the recent things i’ve whipped up at home? a little delicious encouragement.

my college roommate came down for a visit this past weekend (and for a lot more festivities than this!), and she is on a very strict diet. it’s called the “candida diet,” and while i am not interested for myself, she is very happy following it. and she makes some dyn-o-mite almond meal pancakes.
she uses the exact recipe i linked. i tried to make them myself a few weeks, and they were a flop. i think i just added too much almond milk. the batter shouldn’t be thin like pancake batter; it’s more like muffin batter.
i also decided to try out some faux pad thai a la a beautiful mess (minus the shrimp). as i set to work, i realized i didn’t have any of the sauce ingredients. i ended up using some stir-fry sauce, with a few splashes of other things. did not taste at all like pad thai, but it did taste like a pretty healthy dinner.
e.p. and i also made caprese pizza…
we used a whole wheat pizza crust, with olive oil, sliced tomatoes, dried basil, fresh mozzarella, and garlic powder. not exactly hippie food, but it was pretty healthy. especially compared to my recent alternatives.
i guess all i can hope to do is improve. i still need to get my tushy in gear, but if i’m this tired of hearing myself say that, i think it’s time to stop saying it on the blog.
