i had a bunch of food photos to share from december that never made it. i always get excited about the next, and forget to go back. what i ate wednesday is hosted by jenn at peas and crayons.
i <3 eggs. almost as much as ketchup. this round included soy pepperoni. and then i ran out of soy pepperoni and forgot to stock up.
i also remembered an old favorite — rice! it’s sort of like hot cereal how i fix it. ⅔ cup brown rice, ½ cup soy milk, 1 splenda, and 1 tbsp sliced almonds. my grandmom used to fix rice for my mom — rice, milk, and sugar. it makes me feel nostalgic.
the most random breakfast was christmas eve. :-) i made cinnamon buns for EP and me. i haven’t made them since college, and then it was once. i much prefer to splurge on a cinnabon every year or so, but it felt so homey as a christmas kickoff.
i tried my hand at a quick, healthy “frosting” option. 1 tub of cool whip + 1 packet of SF FF pudding mix. i used cool whip free and white chocolate pudding, i think. it was pretty delicious. but only because i love cool whip. i’d made funfetti cupcakes with a can of diet soda. they taste great this way, but they’re so crumbly. the frosting acted as glue in the photo.
in contrast was a more recent snack, that i liked a little more. avocado + tomato with garlic salt and white balsamic vinegar.
now let’s finish up with more holiday-themed foods [well, holiday-themed in my head].
eggnog. i randomly found organic low-fat eggnog. i decided to buy some before i found it, because i don’t have it more than once a year, and it’s been a few. in the photo is ¼ cup. which is 2 points on weight watchers. insane.
and i have found the most delicious chocolate ever — scharffen berger. i got 62%, which is called semisweet. it’s pretty dark, but so smooth. and has been gracing a lot of mugs in the form of hot chocolate. the best.
