here’s a little bit of randomness in the middle of the weekend.
my favorite snack this week has been soy pepperoni [lightlife] and monterey jack cheese [throwback to my childhood] on crackers [sea salt + olive oil townhouse flatbread crisps: the best].
i remembered about morningstar farms grillers original veggieburgers. they are unbelievable with barbecue sauce + laughing cow cheese. sprouts this week gave a nice crunch, too.
EP made us one more bonfire. it was still cold outside. and i stepped in dog poop. but the wine was good. and we had pineapple pizza before we headed out.
i also made myself a proper dinner. like, in the oven. it’s slightly monumental when this happens. on the menu was roasted sweet potatoes [with some olive oil + salt], and roasted brussels sprouts from the freezer [tsp oil + garlic salt]. 350*, and i can’t remember how long… 35 minutes? these brussels were amazing. i can’t believe how good they tasted roasted, even from the freezer. but i do love brussels sprouts.
i also made up the last of my quinoa [from probably a year ago] with veggie broth. such a quick [or, 0-second] swap, and so much more delicious. the proportions should be 1 cup quinoa to 1.5 cups water. i’ve been living a lie and using 2 cups water, and mysteriously, that makes the quinoa more crunchy, weird, and unsatisfying. 1.5 cups.
that brings us to the weekend.
last night i went back to the yoga studio. i have a gym membership again. and i got burnt out on yoga last year with the $99 monthly price tag and 4 classes a week to get my money’s worth. and then i accidentally had a $50 yoga class, when i only made it to 2 classes one month.
but i miss it. gym yoga will just never be the same.
last night, i went for a special class. candlelight yoga!
we brought notebooks to jot down ideas and things to help us think of different ways of being for the holiday season. and i signed up for a chunk of classes. so now i shouldn’t get burnt out… on yoga or on the unlimited price tag.
this morning, i woke up and headed to my weight watchers meeting, and then nursed a migraine with a coffee + soymilk, and georgia rule. i am on a girly movie kick.
tonight i’ll be getting dinner with EP, and then possibly playing monopoly with cocktails. happy saturday.
