for this “what i ate wednesday,” instead of choosing one day, i decided to do a favorites post.

i finally celebrated with my birthday drink from dunkin donuts. i got a caramel latte with skim milk. the guy at the window came back to ask if it was my birthday, and i sheepishly said yes [because i thought he was checking up on me]. he gave me a big smile and told me happy birthday, and wished me a great day.
i jumped right back on the horse with another cantaloupe, after having a terrible one a week ago and throwing it all away. this time, it was just right.
the weekend was celebrated with homemade iced coffee. i made ree’s perfect iced coffee earlier this year, but this method was just as delicious.
homemade iced coffee
7 oz water into the coffee maker, with a really top-heavy coffee scoop. i added some ice to a mason jar, slowly added the coffee, and topped with more ice until it hit 12 oz. it was perfectly chilled and still pretty strong. added some sugar-free vanilla syrup, milk, and a bendy straw.
i carried it with me on my walk in the park sunday morning. others had water bottles. silly. [i hydrated later. but walking with a bendy straw might be the coolest i’ll ever be.]
balanced my walk out with a little soft-serve. gotta love rainbow jimmies. [“jimmies” is just a south jersey argument, right? i call them sprinkles, too. i’d rather eat sweets than argue over them. ;-) ]
EP’s favorite salad: italian / spring mix with light catalina dressing, pecorino romano cheese, and cheesy garlicky croutons. he likes simple, but he likes good.
i cooked up some pierogies and decided to use all my almost-finished tomatoes for a fresh sauce. i chopped 4 tomatoes and tossed them into a pan. added some garlic, basil, and oregano, and eventually pulled off most of the skins.

and i finally made a real meal! baked chickpeas [which i won’t share, because their texture was a little awful], baked kale chips, and potato wedges, which turned out great.
two small potatoes, cut into sixths. sprayed with olive oil and baked at 375* for 30 minutes, flipped halfway. topped with S + P and garlic powder.
my favorite breakfast is still fage plain 2% greek yogurt, this time with 1/2 a banana and a black plum.
goodbye, july! i’m so sad that summer is slipping away, but there’s still a great month left. i might already have more plans for august than i saw in all of july. :-)
