one day off…
i cannot remember the 4th of july ever taking place on a wednesday. but, i’m sure it’s happened sometime in the last 7 years.
regardless… it was one day more than typical, so i have to be happy about it. i woke up and prepped my cookout contribution: caprese salad with homemade dressing [recipe to come].
i made some espresso, and headed over to have some breakfast with papa in the shade by the pool. i’m already itching to get back out for another sunny breakfast this weekend.
the day was laid-back, the sun was shining, and the company was mostly great.
we had some sangria… [i swapped cups and took mandy’s. my dad wrote “PITA” on mine. once they explained what it meant, i pawned if off to her as a joke.]
…and A LOT of cold dip. the name sounds pretty gross. and i’m not sure if the ingredients sound much better. but i am slightly obsessed with eating it at get-togethers. my sister-in-law makes it. i believe it’s something like the following:
- cream cheese + sour cream [blended, for bottom layer]
- ½ onion + 1 cucumber [diced as small as possible, stirred into bottom layer]
- layer of salsa [new to me this time, but amazing]
- cheddar cheese
so good. but it gives me a tummy ache when i eat the ten servings i’m usually good for… whoops. oh well, it’s worth it once a year. everyone pitched in to shuck some corn for our second course. third…? we all lost count.
a fair amount of horseplay and roughhousing occurred in the pool. it was mostly the grown-ups, though.
we’re having another poolside shindig in two weeks for my dad’s birthday. i’m so glad we’re getting together so much. it wasn’t always like this, so i know we all appreciate it now.
