this week, i’m sharing monday eats for “what i ate wednesday.” the link party is hosted by jenn at peas and crayons. if you get a chance, stop by to see all the other great eats this week. i always leave with longer lists of foods-to-make.
i started monday off at my desk with a coffee. i’d spent almost all weekend outside by a nice, pretty body of water [ocean + parents’ pool], so it was a little daunting to be back inside with horrible lighting and no view of the real world. coffee helps.
my huge bowl of cherries + blueberries with 2% greek yogurt also kept me off the ledge. really, the day was just fine. [though i’m not into mondays.] and the breakfast was outstanding.
snacked on some “special dark” sourdough pretzels to make it until lunchtime. i hate everything with a crust, everything overbaked… except these pretzels.
then i finally got to see the outside on my way in to grab some leftovers.
i had some broccoli in garlic sauce [more broccolis unpictured, and eaten cold – which is the best decision, every time]. rice. and some leftover summer squash casserole from my mama on sunday. it was even better reheated, with a little extra cheddar for melting. i had a second large helping of casserole after i ate my plate. i’m always ravenous at lunchtime for huge portions, and then don’t care for a real dinner.
dinner was assembled around 7pm, and simmered away in the rice cooker. :-)
reduced sodium jambalaya mix + can of kidney beans + sautéed onion + red pepper.
i know it’s packaged, and full of extra ingredients, but this is the closest i’ve come to “making dinner” in a while. i’m giving myself credit. so good. i just had a little cup of it [topped with fancy american cheese simply because i needed to use it before it went bad].
i think it’s coming with me to our cookout tomorrow… parents are making ribs + chicken wings for everyone, so i think i’ll heat up a big bowl and have it with some corn on the cob.
the main event last night [you know, around dinner time], was really ice cream. i bought a diet root beer to add to my caramel light ice cream for an impromptu monday night root beer float. <3
