i’ve stuck with this idea most months this year, after i read about sarah breaking down her resolutions. mine are smaller, and less resolutions than things i like to stay focused on [and check off on the checklist].
i typically do not get through what i’ve marked down, but i really like having my plans on one page. unfortunately, i haven’t crafted any interesting ones recently. this month:
- 31 blog posts
- 20 walks or tennis games or yoga classes
- 15 sets of crunches
- 12 happy healthy days
i think i should work on this for next month… i don’t know that these things are what i’m most interested in for the month, but they’re at least things i’d like to work on [and check off :p ].
summer squash casserole
i’ll leave you with a food highlight from sunday. i spent the day at the pool with my mom, while the guys golfed together. i hung around until dinnertime and took another splash in the pool. she had a huge summer squash and didn’t know what to do with it, so we found this recipe: allrecipes.com/recipe/yellow-squash-casserole. i would definitely make it again, but i would definitely tweak the recipe a bit… leave the squash a little crispier; use earth balance and maybe half the amount… not sure what else yet. it was delicious, just a little too buttery or heavy.
and mysteriously, it was even more delicious today, left over, microwaved [with a little bit of extra cheddar to melt on top]…
