i wanted to start this post out on the right foot. this is the miniature ice cream i enjoyed last night after yoga class. i’ve been teased for buying such a tiny container, but the strawberry cheesecake flavor is delicious, and i can eat the whole carton and still be happy afterward. i think it’s a win-win.
prior to that, i made dinner. it was possibly the first real, full dinner i’ve made in a few weeks. i don’t know what i eat in between! certainly nothing this delicious…
this had whole wheat penne, asparagus, zucchini, seasoned diced tomatoes, chickpeas (which i shelled… for no reason at all, while thinking about mama pea), parmesan cheese (not pictured), fresh lemon juice, salt, and pepper. it was delightful, albeit a little too much food 20 minutes before yoga class.
today was more good food… but definitely back to “free form” after last night’s classy dinner.
this morning, i had a 2% mango chobani greek yogurt, with a big mango i spent a long time dicing. it was worth it. (strangely, it didn’t keep me full all the way to lunch, and i had a packet of oatmeal a little while later.)
but it was delicious. and pretty photogenic, if i do say so… stealthily taken at my desk (ON THE IPHONE, of course).
lunch, which remains unphotographed, was my favorite pizza of all time… it’s a special “grandpa’s pizza” that takes extra time to bake, with lots of huge tomatoes, delicious seasonings i will never understand, and
atop each slice,
a piece of fresh mozzarella, and a big basil leaf.
someone had three pieces. and it wasn’t EP, because he had four… ;-)
all that to say, it’s perfectly legit that i craved only a smoothie for dinner. i was basically still full, but i had to eat because i’m going out.
it really hit the spot, too. i have to save my remaining two bananas, because i want to make some banana bread later this week. tonight’s smoothie was:
- almond milk
- baby spinach
- vanilla spirutein protein powder
- frozen blueberries! (still left over from the farmer’s market last summer)
- a teeny bit of xanthan gum
- some vanilla extract
maybe not so photogenic…? but very good. now i have to run! i was supposed to leave 25 minutes to watch some of tonight’s flyers game. :p i was just too excited to post more photos. i couldn’t resist!
