this recipe started (or at least, started for me) with angela at oh she glows. she calls her creations vegan overnight oats. i was on a kick where i made this maybe 2 months straight. and then i moved, and i forgot all about it. that ended yesterday. i present to you, my breakfast pudding:
- 40 grams oats
- tbsp powdered peanut butter (like pb2)
- tbsp cocoa powder
- tbsp chia seeds
- tsp vanilla
- 1 cup unsweetened soy milk
- 1 large sliced banana
combine everything in a big mug, cover, and sit in the refrigerator all night. i secured a piece of tin foil with a rubber band, and it easily survived 30 minutes on the floor of my car before i ate eat.
the banana added plenty of sweetness for me, and it was chocolately and delicious. there was only a hint of peanut butter, but i liked it extra-chocolate this morning. i’ve made it with more chia seeds / less oats, but i was in the mood for chewy texture to chew through.
